Eating and Drinking in Ramusè
I try to follow the rhythm of nature’s seasons.
You will always discover something new at Ramusè depending on the time of year. My food is very important to me and I use only the best fresh local produce, grown at Ramuse, and sourced from local farms using traditional methods. The food served at Ramusè is listed in the restaurant with the origin and producer. I continually search for small local suppliers that care about quality.
Please don’t bring wine or beer in the restaurant or the pergola that you have not bought from Ramusè. Thank you for your consideration
Breakfast
is served from 8:00—9:30
I serve a range offresh fruits, home made yoghurt, cereal, honey, home made jam, salami, cheese, olive oil, bread and cake.
Twice a week I also make scrambled eggs from my own hens. Tea, coffee and milk are available.
Please let me know if you need an early breakfast
Lunch
is served at 1:00PM
If you would like me to prepare lunch for you please let me know at breakfast time. Lunch is a mix appetizer and a first course,water and coffee included. Drinks are extra. Every day there will be a different selection of appetizer and also a different first course. Cost 15 Euros.
If you are going to the mountains or the beach for the day I can prepare a special picnic lunch, 20 Euros per person excluding wine, please let me know the evening before. In your picnic basket: Spelt and chickpea with grilled vegetable, fresh eggs frittata, crostata (jam tart) and coffee. A tablecloth, napkins, plates, cutlery and glasses will be provided in the picnic basket. We do not use plastic plates, cups or cutlery.
Dinner
is served at 8.00 PM
If you are not staying for dinner please tell me in the morning. Dinner is four courses: a small antipasto, a first plate of pasta, a main course plus vegetables followed by desert.
The price is 30 Euros per person excluding wine. Dinner is different every evening and the menu can be found on the blackboard every morning.
Dishes are prepared with the fresh seasonal ingredients from my garden and local farms. Many products I use are part of the biodiversity of Le Marche and are of the highest quality.
Black Summer Truffle
Ramusè is in the center of the Le Marche truffle area
There is a short period in the summer when the truffle has an optimum flavor. During this period I use fresh truffles to create different dishes.
After much research I have found quick-freezing to be the best method to conserve the truffles unique flavour.
If you want buy truffles please ask and I will do my best to find you some quality truffles.
In October and November here at Ramusè I can find the white and black truffle. If you would like to be a part of this truffle experience please speak to me
Farm
There are many animals that live at Ramusé; they are all very friendly and sociable. Trilly is my very friendly truffle dog. The cats are called Carota, Adolfina, Puma, Zamp and Merkre
Melissa and her daughter Coccola are pure breed Sardinian donkeys. They wander around Ramusè, and love to be brushed and fed (but please only fruit and vegetables).
The pond near the trees has its own eco system there are toads, frogs, dragonflies waterlillies and iris’ the water is only 30 cm deep. After your evening meal in the Autumn months you can step outside of the dining room and use my sonic bat detector. This machine along with a torch allows you to see and hear the bats using their echolocation system as they dart across the night sky.
Ramuse is far away from other houses and is set deep in the Marche countryside offering you the chance to stargaze as the night sky is crystal clear due to the lack of light pollution.
